Super Berry Beet Smoothie

SUPER BERRY BEET SMOOTHIE

This smoothie is a powerhouse!

Packed with antioxidants (blueberries, beetroot), fiber (zucchini, apple), lots of vitamins and minerals (like vitamin B 6, C, iron, potassium), with zesty-sweet flavor. It’s low in sugars and visually so tasty! Beetroot powder is super easy to use and nutrient dense, but if you don’t have it handy, you can replace it with a small cooked beetroot.

In case you’re wondering- it’s also perfect to have during pregnancy and on a hot summer day! Enjoy!

Serving: makes 1 large or 2 small smoothie portions.

Ingredients

1 cup frozen blueberries

1/4 apple, chopped

1/2 frozen zucchini

squeeze of fresh lime juice

2 tbsp hemp seeds

1 tsp of your favorite nut butter

1.5 tbsp beetroot powder (or sub 1 small beetroot, chopped)

1 cup cold water (sub part of it with your milk of choice for a creamier version)

Method

Mix all the ingredients in a high speed blender. Adjust the liquids to your liking. The color is incredible and it’s a perfect smoothie on a summer day!
