Minty Green Peas Dip

MINTY GREEN PEAS DIP

Here’s a quick and nourishing recipe for a dip, if you feel like something different than your usual guac or hummus. Green peas is rich in plant based protein, packed with vitamin C and many essential micro and macro minerals. What’s even better- it’s full of fiber, which we all need more of in our diet. Fiber is indigestible part of plants and it’s amazing in helping us to stay regular and keeping our gut bacteria flora healthy.

Green peas is easier digested when cooked, so make sure you cook it for a few minutes. See notes below under ‘method’.

A tip: make it in the morning on a weekend and enjoy with toast and eggs or make it on a Sunday and use as a snack or on your sandwiches throughout the week.

Ingredients

2 cups of peas (use frozen and boil for a 1-2 minutes)

2 tbsp avocado

1 tsp apple cider vinegar

juice of 1/2 lemon

big bunch of fresh mint

sprinkle of ground garlic or 1/2 love of minced fresh garlic

2-3 tbsp cold water

salt, pepper to taste

optional: if you like herby flavors, add 1 tsp of your favorite herbs. I tried rosemary and it was delicious!

Method

  1. Prep the peas: if it’s frozen, add the 2 cups into hot water and boil a few minutes until softer. Take off the stove and let it cool.
  2. Add the peas, avocado, lemon, apple cider and 2 tbsp water into your food processor. Mix well to combine. If the paste is too thick, add more water gradually: start with extra 1 tbsp and then add more if needed.
  3. When mixed and smooth, add fresh mint, garlic and salt and pepper (start with 1/4 salt and adjust to your liking).
  4. Store in a jar or air tight container in the fridge. It tastes good for 2-4 days (but it will probably not last that long if you like it as much as me! ;-).
