Easy Vegan Vanilla Smoothie

LUSH VEGAN VANILLA SMOOTHIE

This one is a good one – 10 points for minimal ingredients and nutritional benefits! The main ingredient here is… cauliflower!

Have you tried cauliflower in a smoothie before? If not, get on that wagon stat! Cauliflower is excellent source of many vitamins and minerals, including antioxidants (like vitamin C), vitamin K and folate (hello, pregnancy). It’s also low in sugars (only a few grams of carbs per 100g!), and fuels our body with healthy fiber. You can’t really taste it much, and a frozen version adds creaminess and turns the smoothie into a dreamy meal!

Ingredients

1 cup of cauliflower, cooked and frozen

1 tbsp of cashew nut butter

2 tbsp of avocado

1 1/2 medjool date

1 scoop of vanilla protein powder (20g) (I use Form Nutrition)

dash of vanilla extract

1/2 cup of cold water (or sub for plant based milk)

1/4 cup of plant based milk

Method

Put all ingredient into a high speed blender and mix until smooth. I like this smoothie to be a bit thicker, but you can add more water/ milk depending on desired consistency. Enjoy and tell me what you think!
