Easy PB Oat Bars

EASY PB OAT BARS

Perfect as a travel snack!

Is it always snack o’clock for your kids also?!

Try this healthier flapjack version to get them going. Just a few ingredients and packed with whole grains, healthy fats and is refined sugar free. Perfect as a flight snack or in a lunchbox. My 2 yr old always asks for 1 to have in each hand 😉 I made a batch of them for our longhair flight to New Zealand a couple of weeks back and it was a perfect travel snack!


⁣Ingredients

2 cups oats (around 240 grams)⁣

1/2 cups peanut butter (or any other; around 120g)⁣

1/3 cup and 2 tbsp maple syrup (around 100ml) ⁣

1 ripe banana⁣

2 tbsp flaxseed ⁣

2 tbsp pumpkin seeds (blend them first)⁣

2 tbsp sunflower seeds (blend them)⁣

1 tsp cinnamon ⁣

half tsp mixed spice (or sub more cinnamon)⁣

1-2 handful of raisins ⁣

Method
  1. Blend the seeds to a coarse flour consistency in a blender or food processor.
  2. Next, add oats, PB and rest of the ingredients except flaxseed and raisins. Pulse a few times until well combined.
  3. Lastly, add flax seeds and pulse a few more times. At the end add the raisin (1-2 handfuls; or replace with cranberries or other dried fruit) and stir them in.
  4. Transfer to a name tray (around 9×13 in). Bake for 15-20 min at 175C. Let it cool down and harden a bit before slicing.
  5. The bars will last in an airtight container or fridge for around 5 days.
