Easy Family Pancakes

EASY FAMILY PANCAKES

These super easy and filling pancakes are perfect for weekday or a weekend! Take around 10 minutes to make and both kids and I love them! Combination of complex carbohydrate and protein will keep you and the little ones full for longer. Go crazy with some toppings- fruit, yoghurt, nut butters are all wonderful and nourishing options.

Serving: serves 2 (I’d double up for a large breakie for family of 4!).

Ingredients

1 small ripe banana

1 egg

5 tbsp oats

1 heaped tbsp ground flaxseed

3/4-1 cup of oat milk (or other plant based milk)

handful of raisins

generous dash of cinnamon

Optional for the grown up version: 1 large scoop protein powder (see below)

Method

Mash the banana in a bowl and add rest of the ingredients, except milk. Slowly add milk while stirring and see when you reach the desired consistency (usually thicker, but pourable batter works best). If you have extra 5 minutes, leave it aside to thicken up and soften the oats (you might need to add a dash or two more of milk after that).

For the grown up version: to 1/3 of the batter add a large scoop of your favorite protein powder (I use this one, in vanilla flavor). Add more milk to reach the nice consistency.

Heat up a pan with coconut oil and fry on each side for around 1 minute or until golden brown. Serve immediately, with fruit, peanut butter, yoghurt or other favorite toppings.
