Beet Protein Energy Balls

BEET PROTEIN BALLS

I’ve been into healthy snacking for all of us in the house lately. I like to have something in the fridge or cupboard that either me or my older child can reach for when we feel peckish. I made a habit out of having some energy balls, homemade protein and fiber bars handy- they’re perfect for when hunger strikes and need something ‘different’!

Try these awesome red energy balls: they’re packed with protein and good fats thanks to nuts and seeds. Carbohydrate and natural sugars in dates will give you energy without a nasty crash. And, the sneaky addition of the beetroot powder, will add an amazing flavor, color and many nutritional benefits including – and not limited to – antioxidants, fiber, potassium and folate.

Ingredients

7 medjool dates

1/2 cups of Brazil nuts

1/4 cup of cashew nuts

2 tbsp of chia seeds

1/4 cup + 1 tbsp of hemp seeds

2.5 tbsp of beetroot powder (or sub with raw cacao)

Method

  1. Put the dates into food processor and mix until sticky paste forms.
  2. Add Brazil nuts, cashew nuts, seeds and mix until well combined. You might need to scrape the sides a few times, to make sure you get all the ingredients in there!
  3. Add the beet powder and pulse a few times again for all the ingredients to mix. If the paste is too sticky, add a little more of the powder.
  4. I like a medium size snack, so roughly 1 tbsp of the paste is enough to form a ball. They’re best stored in the fridge and eaten within 7-10 days (shouldn’t be a problem ;-).

Perfect as an afternoon snack at work, kids’ sweet treat or to have with coffee. This snack travels well, so great on the go!
