Autumn Pumpkin Cookie Smoothie

I have had this smoothie for breakfast twice this week already, and it’s only Tuesday!

Potentially my new seasonal favourite 🙂 Vanilla and pumpkin together, paired with a cinnamon taste like an autumn cookie to me! No fruit here, just veggies, healthy fats and protein to keep you energized until lunch.⁣

Orange veggies are rich in vitamin A, and many flavonoids like vitamin C and lycopene. Many of them provide a good amount of potassium and support our sight, immunity and skin and have anti-cancer properties.

Ingredients

1/3 cup pumpkin purée⁣ (I use 100% pumpkin, Libby’s brand)
1 tbsp avocado⁣
1 tsp almond butter (or any other nut nutter)⁣
1 tsp cinnamon ⁣
1/2 pumpkin spice⁣
1 portion of vanilla protein powder ⁣(I use Nuzest)
1 cup of cold water ⁣
1/4 cup coconut milk⁣

Method

Blend it all up on high speed. if you prefer, add more water for a lighter consistency. Enjoy!
