ALMOND BUTTER TURMERIC PEAR TOAST
Introducing an elevated version of your standard PB toast! This is one of the best easy simple I’ve been eating recently – it’s nutritious, packed with flavor and ready under 5 minutes! AMAZING with your morning cup of tea or coffee 🙂
A good quality sourdough or gluten free bread paired with almond butter and stewed spiced fruit – blooming delicious!
WHY TO TRY THIS RECIPE?
- almond butter – for protein, healthy unsaturated fats and some key essential minerals like magnesium or potassium (we need them for energy production, healthy bones and balance of fluids/ electrolytes in our body)
- pear, dried apricot & fig – a fab source of fibre, essential minerals like potassium or manganese, plus antioxidants (they’re vital- more on those coming soon in a separate post!)
- turmeric + black pepper – do we even need to say more? (amazing antioxidant, fighting off inflammation and supporting digestion; beloved Ayurveda herb) (I use these turmeric/ curcumin capsules that are concentrated and contain black pepper, but you can also use ground turmeric + a twist of fresh black pepper)
Ingredients
1 small pear, in cubes/ pieces
1 dried apricot, finely chopped
1 dried fig, finely chopped
1/2 tsp of turmeric
fresh black pepper
1/4 tsp cinnamon
1/2 tsp pumpkin spice (or sub more cinnamon)
dub of coconut oil or ghee
2 tbsp almond butter
Method
Put the coconut oil in the heated pan and add the pear, dried apricot and dried fig. Stir a few times and let it stew for 1 minute. Meantime, prep your toast.
Next, add the turmeric, pepper and pumpkin spice to the fruit mix and stir well. The mixture will become more soft and stew-like, this is what you want! Serve on 2 pieces of good quality toast (I go for gluten free or a good sourdough) with almond butter on it. Devour while still warm!
