SWEET POTATO: FRIES WITH BENEFITS

Here’s to mighty sweet potato, aka fries with benefits. 

Sweet potatoes are one of the veggies that definitely ‘made it’. Would you agree? Out there, you’ll find sweet potato recipes that are sweet, savory and spicy. They can be mashed, crispy or stuffed. They are one of my favorite veggies – so versatile and nutritious, easy to add to recipes or make a whole meal out of them (think: jacket sweet potato!).

You can boil them, roast, steam or grill. Perfect baby food and it goes well with many flavors and spices. And, by many, it is actually considered to be a superfood – rightly so!

HOW DO SWEET POTATOES HELP YOU BLOOM?

  • helps with fighting off some chronic diseases and aging- sweet potatoes are super rich in antioxidants, especially in beta carotene which is converted in our body into essential vitamin A (retinol)
  • stronger immune system- they are rich in vitamin C, which supports your immunity and enhances iron absorption
  • improving digestion – 1 cup of sweet potato has over 6g of fiber which makes us more regular and helps our gut to be healthier (by promoting the growth of the friendly gut bacteria in our colon)
  • stronger eye health and healthy skin – thanks to beta carotene compound, which is the orange-red color found in many veg and fruit
  • supporting healthy cells, metabolism and energy levels- thanks to high levels of some B vitamins like B5, B6 or biotin 

 Some of my favorite ways to to eat sweet potatoes is as crispy fries (with anything) and in stews/ curries. They’re also fantastic in baked goods (yes, brownies!) and in smoothies (like this one, pairs wonderfully with blueberries!).

Fun fact: apparently February is a sweet potato month with 22nd being the national “eat a sweet potato” day. Are you in for some celebrations?
