Sweet & Spicy Cauliflower Curry

SWEET & SPICY CAULIFLOWER CURRY

Do you have 15 minutes to make dinner?

Try this veggie, super easy and TASTY curry! You probably have all the ingredients in your cupboard. If you love a combo of spice and sweetness, this will be your jam. It literally can be done while watching a toddler and a baby crawling and playing around at your feet in the kitchen!

Feel free to control the heat / spice amount by adding more chili powder or a chopped fresh chili- that way you’ll make it perfect for kids! To have this delicious meal even quicker, have some brown rice boiled/ ready or make sure you boil it when you start prepping the curry.

Serving: 4-5 portions.

Ingredients

2 tbsp of oil

1 medium onion, chopped

3 garlic cloves, sliced thinly or crushed

1 full cup of cauliflower, small florets/ pieces

1 medium potato, cubed

3 tsp of ground garam masala spice

2 tsp of ground cumin

1/2 tsp of turmeric

1/2 tsp of mild chili powder 

1 can of coconut milk 

approx. 1/4-1/2 cup of water

salt, pepper to taste

1 can of cannellini or butter beans (or sub chickpeas)

juice of 1/2 lime

3 tbsp of dried cranberries (or raisins)

1-2 handfuls of spinach 

To serve: brown rice, green lentils, quinoa or sautéed kale/ spinach

Method

  1. Peel onion and garlic and finely chop them. Pour some oil into a large pot over high heat. Once hot, add the onion, garlic, pinch of salt and cook for 2-3 minutes until soften.
  2. Now, add the cubes cauliflower, potato and all the spices. Mix well and fry for 2 minutes, stirring regularly to let the spices come together .
  3. Pour in the coconut milk, water and let it bubble, stirring occasionally for 10 minutes or until cauliflower and potato soften.
  4. Add beans, lime juice and cranberries (or raisins). Stir a few times and heat for another few minutes. Adjust the flavors by adding more salt, more chili powder or lime for tanginess. Throw in a few more cranberries for the sweet/ spicy flavor balance. You may also add more water if you want less thick consistency.
  5. Before serving, add the spinach and stir a few times until soften/ blanched.
  6. It taste amazing over a bowl of brown rice or quinoa. Or if you want a lighter meal, serve it on a bed of sautéed kale (sauté with some apple cider vinegar, delicious!)
