Quick Green Peas Over Eggs

QUICK GREEN PEAS OVER EGG

Quick weekday meal idea like no other 🙂 Green peas over eggs and tomatoes!

That’s right- I’m flipping it around: we are aiming for veggie stir fry with an egg whisked through it- so more veg than egg on your plate! I’m taking standard plane scrambled eggs and changing them into even more nutritious and plant-powered quick meal. It’s one of those you can make when you think you have nothing in the fridge and all you want is to turn into the bread corner for your 9th toast of the day or a take away menu. ⁣⁣

Give it a go for breakfast, lunch or dinner- it’s tasty, nourishing and packed with 2-3 veggie portions. Add to it a side of avocado, sourdough or fresh salad, or even a handful of cooked brown rice and voila- completely pain-free, easy whole food meal.

Serves: 1⁣⁣⠀⠀⠀⠀⠀

Ingredients

1 egg⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp turmeric⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
splash of plant-based milk (2-3 tbsp)⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
black pepper⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
salt ⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
3/4 cup green peas (can be frozen)⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
5 cherry tomatoes ⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
avocado oil/ coconut oil⁣⁣⠀⠀

Method

Prep the eggs as for a normal scramble – whisk with a fork, add the turmeric, black pepper, and salt. Meantime, heat up a pan with oil and when hot, add peas and chopped tomatoes. Stir a few times and let the peas thaw and soften a bit. When peas and tomatoes look ready, after around 2-3 minutes, add the egg and whisk everything a few times.

Serve with a piece of sourdough or wholegrain toast or with extra salad (spinach and tomatoes go great!).
